  • 1 1/2 lbs sweet potato, peeled, diced into ~1/4″ cubes
  • Salt, pepper, cinnamon, to taste
  • 1 lb 93/7 lean ground beef
  • 1 tbsp tomato paste
  • 1 tbsp taco seasoning
  • 2 cups 2% low-fat cottage cheese
  • 4 small avocados, sliced
  • 2 tbsp hot honey

How to Make Hot Honey Ground Beef Bowls

Roast the Sweet Potatoes:

  • Preheat oven to 400°F (200°C).
  • Toss the diced sweet potatoes on a baking sheet with salt, pepper, and cinnamon to taste.
  • Roast for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.

Cook the Ground Beef:

  • While the sweet potatoes are roasting, cook the ground beef in a large skillet over medium-high heat.
  • Cook until browned, breaking it up with a spoon.
  • Drain off any excess grease.
