taco seasoning

2% low-fat cottage cheese

hot honey

Instructions
Roast the Sweet Potatoes:
Preheat oven to 400°F (200°C).
Toss the diced sweet potatoes on a baking sheet with salt, pepper, and cinnamon to taste.
Roast for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.
Cook the Ground Beef:
While the sweet potatoes are roasting, cook the ground beef in a large skillet over medium-high heat.
Cook until browned, breaking it up with a spoon.
Drain off any excess grease.
Stir in the tomato paste and taco seasoning. Cook for another 1-2 minutes until well combined.
Assemble the Bowls:
Divide the roasted sweet potatoes, seasoned ground beef, and cottage cheese among four bowls.
Top each bowl with sliced avocado and a generous drizzle of hot honey.
Serve and Enjoy!
